John Shelly at Katers Resaurant, Peppers Manor House… featured producer (March 2016)
We love it when our chefs showcase our wonderful local producers and John Shelly, Executive Chef at Katers Restaurant at Peppers Manor House does just that. He is passionate about using local ingredients in his dishes at Katers and he has developed strong relationships with many of our local producers who have become his regular suppliers.
John was born in Tipperary, Ireland. During his childhood all the food on the table came from the family farm, dictated by the changing seasons. John understands what is involved in growing food and he has the utmost respect for farmers. He feels privileged to be able to use high quality fresh local ingredients. John says this makes his job, turning the ingredients into a fine dining experience for his guests, much easier.
John came to Australia nine years ago and went directly to Katers Restaurant where he worked as Sous Chef for almost 5 years. During that time the restaurant achieved the SMH Chef Hat two years on a row – 2008 and 2009. After a break away working elsewhere, John was welcomed back six months ago as Executive Chef. His goal now is to achieve the SMH Chef Hat again, so watch this space!
Katers is in the Moss Vale Food and Wine Cluster so when you visit the Highlands, don’t forget to explore this area, including Peppers Manor House where you can stay overnight, enjoy fine dining at Katers restaurant or relax in the courtyard for a more casual experience selecting from the Katers Larder Menu.
Ask for a tour of the Chef’s vegetable garden and I’m sure if they are not too busy that they will take you.
The Southern Highlands Food and Wine Clusters have been created to showcase our wonderful local produce and support and value our local growers. We want our visitors to the Highlands to explore the Clusters and get to know what we offer. Both visitors and locals may not be aware of the wide variety of food that is grown in this area or the wonderful cool climate wines that are produced here.
